Pickled Fig, Robiola, & Pistachio Oil Crostini

Well..this is not my standard type of recipe but I LOVE IT! It's delicious and light and great for parties. I hope you guys enjoy them as much I do! 


Ingredients

  • ~12 slices ciabatta bread~1/2 cup red wine vinegar
  • ~2 tablespoons sugar
  • ~6 dried figs
  • ~1/4 cup water
  • ~2 tablespoons pistachios, toasted and shelled
  • ~1/4 cup extra-virgin olive oil
  • ~Robiola cheese


Step 1: Combine red wine vinegar, sugar, and dried figs with 1/4 cup water in a saucepan; bring to a simmer. Remove from heat and let sit until figs soften, about 30 minutes.

Step 2: Halve figs lengthwise. (Alternatively, use 6 fresh figs and halve lengthwise.)

Step 3: Finely crush pistachios and combine with extra-virgin olive oil.
Grill bread slices. Smear room-temperature Robiola cheese onto warm toasts. Top with halved figs. Drizzle with pistachio oil

Monte Cristo... It sounds just as good as it sounds fancy :)

I tried this once at a restaurant and decided to once again put my own spin on it! So normally Monte Cristos' don't have chicken breast but I of course decided to put it in! They normally consist of ham, turkey, and swiss cheese, but my version consists of chicken breast, munster, and swiss.  This is delicious. :]


Makes 2


Ingredients:


~ 4 slices of italian bread
~4 slices of munster cheese
~4 slices of swiss cheese
~4 slices of deli cut chicken breast


~ 2 cups of batter ( any type of pancake batter works)




Step 1: Place 2 slices of  munster on bread, then 2 slices of chicken breast, and finally 2 slices of swiss and complete with another piece of bread.


Step 2 : Heat up 3 tbs. of vegetable oil into a skillet, dip sandwiches into batter and set in skillet. Cook until golden brown on all sides. 


Step 3 : Pour Eggo syrup over sandwich and enjoy!
